There's a discussion of full color or
polychromatic anaglyphs at

It seems that only a limited palette can
be supported and some images
can be too problematic for the human
visual system to fuse.
I think it's much easier to use
polarized stereo rather than anaglyph
stereo for 3D UI's with passive stereo.
